Here's a suggestion for live crab/lobster (not generally used in restaurants because it's inconvenient). Start with COLD water (which is why it's inconvenient for restaurants--requires starting fresh each batch). Put crab/lobster in cold water, heat normally. As the water warms, it will relax and fall "asleep". The muscle fibres will be soft, not clenched in shock as happens when it is dropped into boiling water. Flavor is much better, too.
